The best way to determine what tools you will need for your gourmet kitchen is to decide what you are going to be preparing there.

While many people believe that professional cooks carefully guard their recipes and preparation methods, this is often not the case. Many chefs really love what they do, and find joy in the fact that people appreciate their craft. If you have a dish that you absolutely love at a restaurant don’t be afraid to ask the chef how he prepares it or to give you a recipe. You will be surprised at how many tips you will actually receive if you keep the question broad rather than specific. If you run into a chef who is not willing to share, move on. There are many people who could give you guidance in making a particular dish. Another great benefit of speaking with the chef is getting an opportunity to see how their kitchen is equipped.

One of the most important things you will purchase is a set of cooking knives. Almost every recipe will call for a certain amount of chopping and slicing. Once you are familiar with the knife you can purchase a bigger one if you feel you need it.

Besides length, you will need to determine whether you want your chef’s knife to be either German or French style. The German style chef’s knife blade is shorter and wider, which makes it better for chopping. The French style chef’s knife blade is longer and thinner, making it ideal for slicing. A good idea is to look at the five recipes you have collected to see what they call for most. The knife you choose should feel balanced in your hand. Be sure to hold it and make sure the grip is secure and feels good in your hand. Check the handle and be sure that there are real rivets connecting it to the blade.
